Spring

Spring marks the beginning of the new season. Tender rhubarb and asparagus start growing as soon as the light shows after the long winter. Nettles and wild garlic can be picked in forests and around farmlands and used in soups and sauces.

Festivals around the Nordic countries celebrate the new crop, for example when the seasonĀ“s first new potatoes arrive.
